Strawberry and vanilla ice cream
ingredients
- 600 g of fresh strawberries
- 100 g of icing sugar
- 600 ml of sweet cream
- 1 teaspoon of pasta or vanilla extract
- 1 can (about 400 ml) of condensed milk
- 50 g of crumbled meringues
Instructions
- Preparation of strawberry syrup: Wash, clean and cut the strawberries in half. Heat the icing sugar in a pan until lightly caramelize it. Add the strawberries and two tablespoons of water and let it simmer for about 15 minutes, until the strawberries are softened and a siroppose compound has been formed.
- Preparation of the ice cream base: In a large bowl, whisk the cream with the pasta or vanilla extract to form soft peaks. Gently add the condensed milk by mixing until a smooth cream is obtained. Add the crumbled meringues and mix them gently to the mixture.
- Gelato preparation: Pour the prepared cream into a container suitable for freezing. Pour the cooled strawberry syrup on the surface and mix gently with a spoon to create a marbled effect. Cover the container and put it in the freezer for at least 4 hours, until the ice cream has completely solidified.
- Remove the ice cream from the freezer about 30 minutes before serving, so that it softens a little and is easier to take. Serve in cups or cones and garnish with fresh strawberries and other crumbled meringues, if desired.
Filter the mixture through a strainer to remove any solids and let the syrup cool completely.
